How to make ``Maki-sushi`` 巻き寿司

Hi there Konichiwa~,

 

On sethubun (3rd Febrary) we eat Maki-sushi, I would like to share how to make two kinds of easy maki sushi, the recipe in Japanese is bottom of this blog.

<ingredients>

300g coocked rice (hard cooked is better)

20ml rice vinegar,  3g salt, 25g sugar ←for sushi vinegar

2 eggs, a little salt, a little sugar ←for rolled omlette

2 sheets of seaweed

 

<for raw tuna maki-sushi>

a quater of avocado

5 slices of raw tuna (block of tuna)

 

 

<for sweet saysauce maki-sushi>

50~60g sliced beef (pork,chicken are also good)

a lettuce

★How to make sushi rice★

 

(1)Mix cooked rice and sushi vinegar while the rice is still hot in a bowl and slice through the rice using a rice paddle (wet spoon instead) to separate the grains. 

(2)Spread the rice to get cool.

(3)Cover wet cloth softly not to get dry.

★How to make rolled omlette★

(1)Beat eggs and a little sugar, salt in a bowl.

(2)Heat vegitable oil in a frying pan on law heat then pour quater of egg mixture in the pan and spread over the surface, cook until half done. Roll up the egg and remove it to one end. Pour in another quater of egg mixture and flow under the rolled egg also. Repeat this until all the egg mixture is gone.

(3)Wrap the rolled omlette and form into rectangle.

(4) Cut into 4 bars.

★How to make raw tuna maki-sushi★

(1) Cut and prepare ingresients.

cut avocado/ bar of rolled eggs/sliced raw tuna.

(2) Cover a bamboo sushi mat with plastic wrap.Place nori sheet on the mat, shiny side down. Spread a half of the sushi rice on the nori sheet using wet fingers.Leave 1cm blank space from the top is better.

(3) Place the rolled eggs, avocado and sliced raw tuna across in a line.

(4)Roll the bamboo mat forward, holding the line of ingredients firmly with your fingers all the ingredients are predded in and finish rolling it.Gently pressed the mat around the roll to shape it.

 

(5) It's done!!

★How to make sweet saysauce maki-sushi★

(1)Mix 15ml soysauce, 15ml sugar.← sweet soysauce.

(2)Heat vegitable oil in a frying pan on low heat and stir fry beef until no longer pink then add sweet soysauce. Lemove it to the dish to get cool.

(3) Prepare ingredients a lettuce, cookes sweet soysauce beef,rolled omlette.

 

(4) Cover a bamboo sushi mat with plastic wrap.Place nori sheet on the mat, shiny side down. Spread a half of the sushi rice on the nori sheet using wet fingers. Leave 1cm blank space from the top is better.

(5)Place the rolled eggs, avocado and cooked sweet soysauce beef across in a line.

(6)Roll the bamboo mat forward, holding the line of ingredients firmly with your fingers all the ingredients are predded in and finish rolling it.Gently predd the mat around the roll to shape it

On sethubun we eat whole maki-sushi without any saying but usually we cut and eat them.

 

<日本語>

材料:マグロ巻き寿司、牛肉甘辛煮の巻き寿司 1本づつ

炊飯したごはん 300g

ml酢、g塩、g砂糖←酢飯用の酢

2つ卵、塩少々、砂糖少々←卵焼き用

板海苔2枚

 

<マグロ巻き寿司用:1本>

アボガド4分の1

刺身用マグロ5枚

 

<牛肉甘辛煮巻き寿司:1本>

50~60g 牛肉薄切り肉(他の肉も可)

1枚 レタス(サラダ菜など)

 

★酢飯の作り方★

(1)ご飯が温かいうちに、酢飯用の液とご飯を切るように混ぜる

(2)広げて冷ます

(3)冷ましている間は乾燥を防ぐために、濡れ布巾を軽くかぶせるのがおススメです

 

 

★卵焼きの作り方★

(1)ボールの中で卵2つと、塩・砂糖少々を混ぜ合わせる

(2)フライパンを弱火でかけてサラダ油を入れる、4分の1の溶き卵を入れて広げて半分ほど火が通ったら、クルクルと端に向かって丸める、丸めた後空いたスペースに再度4分の1の卵液を流しいれる(巻いた卵の下へも)焼けたら又巻く、を卵液が無くなるまで繰り返す

(3)取り出してからラップをかけて長方形に成型する

(4)4等分に切る

 

 

★マグロ巻き寿司の作り方★

(1)アボガド、マグロ、卵焼きを準備する

(2)巻きすにラップを覆い、海苔の光沢のある方を巻きす側へするようにのせる、濡れた指で酢飯を海苔に広げる、上1cmあけるのがおススメ

(3)アボガド、卵焼き、マグロの刺身(切り身)を敷いた酢飯の真ん中より手前に一列に並べる

(4)巻きすを手のひらを使い丸めていく、中身がでないように巻き終わりまでしっかり両手で巻き、丸く形を整える

(5)できあがり!

 

 

★牛肉甘辛炒め巻き寿司の作り方★

(1)15ml醤油と15g砂糖を混ぜておく

(2)熱したフライパンにサラダ油を入れてから牛肉を炒める(弱火~中火)、色が変わったら混ぜておいた醤油&砂糖を入れて混ぜる、お皿にあげて冷ます

(3)サラダ菜・卵焼き・牛肉甘辛炒めを準備する

(4)巻きすにラップを覆い、海苔の光沢のある方を巻きす側へするようにのせる、濡れた指で酢飯を海苔の上に広げる、上1cmあけるのがおススメ
(5)サラダ菜・卵焼き・牛肉甘辛炒めを酢飯の真ん中より手前に一列に並べる
(6)巻きすを手のひらを使い丸めていく、中身がでないように巻き終わりまでしっかり両手で巻き、丸く形を整える
(7)できあがり!

 

節分の日は巻き寿司を切らずに食べ、終わりまで喋らずに食べ終わりますが、通常は切って食べます。
